Chickin’less Salad


Who needs chicken salad when you’ve got this? Make this mixture the day before a party, then let the flavors mingle overnight in the refrigerator and spread it on sandwich bread before the main event! Use any veggies you like…in this week’s social media post we opted to go without the apple and add roasted red peppers.


2 cups soy curls
2 tsp poultry seasoning
½ large red bell pepper minced (remove seeds and stem)
1 cup minced purple onion
1 cup sliced celery
1 apple, diced
1/2 cup vegan mayo, only as needed
4 Tbsp lemon juice
¾ tsp salt
¾ tsp dried dill weed


  1. Soak soy curls in warm water with 1 tsp. poultry seasoning for 15 to 20 minutes. Press the water out of the soy curls and put into a food processor with an “S” blade and process until the curls are broken up and resemble chunks of chicken. Add second teaspoon of poultry seasoning. Mix well.
  2. Place all ingredients in a bowl.
  3. Mix well, taste and adjust seasoning.
